Ice Cream Sandwiches

Preheat oven 350°

  • 2 Cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt (If you're using salted butter or salted peanut butter, don't add salt)
  • 1 Cup peanut butter
  • 1 Cup brown sugar
  • 1/2 Cup granulated sugar
  • 1 Cup butter
  • 2 eggs
  • 1 tsp. vanilla
  • 12 oz semi-sweet chocolate chips
  • 2 Tbs. butter
  • 1/2 gallon vanilla ice cream

Directions:

Mix dry ingredients.  Mix wet ingredients, add dry ingredients.  Bake 8-10 minutes.

While cookies are baking, melt chocolate chips and 2 Tablespoons of butter over a double broiler. Put melted chocolate aside, allow to cool.

Allow cookies to cool. Transfer cookies onto a cookie sheet covered with wax paper. Place in freezer for 10 minutes.

Scoop vanilla ice cream onto one half of the cookie and lovingly press it down with another cookie. It is best to use ice cream that is not too hard or the cookie will break.

Re-freeze cookies for 30 minutes. Dip into chocolate and place back onto wax paper. Freeze at least 20 minutes.
